Whisky Marmalade
A Homemade Wedding Favor with Vintage Style

A Unique Gift for your Wedding Guests

The whisky marmalade is a unique way to embrace the old days and bring them to your wedding day.
This sweet has a good kick of whisky but a sweet caramel flavor as well.

If you are having a vintage wedding theme
this marmalade is the perfect fit if you think of DIY favors. It is also inexpensive and will take you about 90 minutes to make.

The recipe presented here makes about 9 lb (2.7 kg) and you can keep it up to a year.

Ingredients and Recipe

You need:

* 3 lb 3 oz (1.5kg) bitter oranges scrubbed,
* 3lb 3 oz (1.5kg) light brown sugar,
* 1/4 cups of whisky or brandy.

Ina non reactive pot place the oranges with 8 cups of water, cover and simmer for 60 minutes until the fruit is very soft. Remove from the heat, take the fruit out and measure the liquid left in the pot. Add to it enough water to make 6 cups and stir in the sugar.

Cut the fruit in halves and scoop out the flesh and seeds. Tie the seeds in a square of muslin. Chop the peel coarsely and add to the pan with the muslin bag. Stir over low heat until the sugar dissolves.

Increase the heat and cook at a full rolling boil for 10 minutes until the marmalade has reached it setting point. Cool for 10minutes and stir in the whisky. Ladle into sterilized jars, seal and label.
