Italian Wedding Cake Recipe
A Unique Wedding Cake

The italian wedding cake recipe is actually quite easy.

This sweet concoction is a classic at italian celebrations and you can easily incorporate it in your celebration.
If you are an avid baker, you should get this done quite quickly.
The secret (and main attraction) lies in the original cream cheese frosting.

If you never had it before , I quite simply say you don't know what you are missing.
. take into account you will need about 1 hour to prepare everything and about 35 minutes to bake it.
After that, you will have to put the cake together and decorate it, but everyone does this at their own pace.

This italian wedding cake recipe will allow you to make one 3 tiered 8 inch round cake, serving 10, so calculate accordingly.
But enough talking, let's get to work.

For the cake you'll need

1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening
1/2 cup margarine
2 cups white sugar
5 egg yolks
1/4 teaspoon almond extract
1 teaspoon vanilla extract
2 cups all-purpose flour
5 egg whites
1/2 cup drained crushed pineapple
1/2 cup flaked coconut
1 cup chopped pecans

First preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch pans. Combine the buttermilk, baking soda and salt in a bowl and set aside.
In a larger bowl, mix together the shortening, margarine and sugar until light and fluffy.
Beat in the egg yolks one at a time, then stir in 1 teaspoon vanilla and almond extract.
Now it's time to grab the buttermilk mixture and incorporate flower in it.
Now incorporate together, the shortening mix and the buttermilk mix together to create the batter.

In a separate bowl, beat the egg whites until they form stiff peaks.
Gently fold the egg whites into the batter. Stir in pineapple, coconut and 1 cup pecans.

Now you are ready to place the batter in the pans and bake it in the preheated oven.
Allow cake layers to cool 10 minutes in pans, then turn out onto wire racks to cool completely.

And for the frosting

3/4 cup butter, softened
1 (8 ounce) package cream cheese, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

Mix together the butter, the cream cheese and confectioners' sugar until blended.
Stir in 2 teaspoons vanilla and you are good to go.
If frosting is too stiff to spread, stir in milk a teaspoon at a time until it reaches desired consistency.
Once you covered your cake with the frosting you can spread the chopped pecans as decorations.
If you are making several tiers, you can use this frosting on the top tier alone and cover the other tiers with your favorite frosting or fondant.
