Irish Whiskey Cake
Traditional Wedding Cake

The irish whiskey cake is not only a delicious treat but it is also the traditional cake for irish weddings.
So if you are having an irish wedding theme you could perfectly introduce this cake as part of your tiered cake.

Traditionally , only the top tier is made with this cake, which

after the wedding is saved and eaten at the couple’s first kid's birth.
As this is only the recipe for the top tier that contents display here will make a cake with 12 servings.
If you plan to make more tiers with this recipe, multiply the ingredients accordingly.

This recipe shows you how to make it from scratch, but if you feel that it may be a little bit challenging for your baking abilities, or if you are crunched in time, take the short cut and use the irish whiskey cake mix recipe instead.

What you will need

For The Cake

1 cup Seedless Raisins ( I preferred golden raisins, but you can use any type)
1 1/2 cup Cold Water
1/2 cup Shortening
1/2 cup Sugar
1 Egg
1 1/2 cup Flour
2 tea spoon Baking Powder
1 teaspoon of baking Soda
3/4 tea spoon Ground Cloves
3/4 tea spoon Nutmeg
1 d Allspice
1/2 tea spoon Salt
1 c Walnuts -- chopped
1/4 cup of Whiskey

For The Icing...

1/4 c Butter -- softened
3 1/2 c Powdered Sugar
1 Egg -- beaten
1/4 c Whiskey

Let's get to work!

For yu Irish whiskey cake begin by placing raisins in a small saucepan with water and bring them to a boil.
Simmer 2 minutes and drain thoroughly, reserving 3/4 cup liquid; cool.
Beat shortening until soft. Gradually beat in the sugar until you get a light and fluffy mix.
Add the egg and beat until blended.

Sift the flour with the baking powder and the soda. Also add the cloves, nutmeg, allspice and salt.
Fold into shortening alternately with the reserved liquid. Stir in raisins, walnuts and whiskey.
Greased and line with waxed paper two 8" round cake pans and pour the mix into them.

Bake in at 350¯F oven for 30-35 minutes until cakes test done. Cool slightly, turn out of pans and cool completely.
Beat together all the icing ingredients until fluffy.
Spread between cake layers and over top and sides of cake and you are ready to savor and wow with this treat!
